[monday meals mashup]

Hey hey hey.

Don't worry (I can sense you were nervous) I have not forgotten about the blog. Chuck is going back to school to get an MBA and he is ruining night time Susie blogging time. Good news is class just ended and we are working on a better custody agreement for the computer for the next round of classes (ie: get your own, Charles or go to a library - I have blog).

This week's meal plan was a fun one to make. Sam was being ultra clingy needy boy morning and was super understanding of my need for 10 minutes of alone time to make our grocery list. So understanding. About that time Jessica texted that (at 37 weeks pregnant) she was done meal planning and could she just copy mine this week?

So, her and Lucas came over for a BFF play date because when those boys get together, we only need to put an ounce of effort into parenting them.  Mostly just open the back door, release the hounds and listen for crying or silence. It worked great and we got our meal plan for the week.

Here's what I'm making this week:

Monday: Café Rio Pork - this recipe was stolen from my friend Cheryl. It's a knock off recipe from Café Rio, a chain of Mexican Grill restaurants. Easy and delicious. To make the pork, place a 2-4 pound pork loin in the crock pot and cover with 1 cup brown sugar and 1 cup salsa (not fresh). Cook all day. You can do a lot with this meat after it's made: burritos, salads, etc. Top with this creamy tomatillo dressing and it's a winner.

Tuesday: Chicken Divan - a simple, mish mashy type casserole. Meat, cheese, vegies. It's all in one. [recipe card below]

Wednesday: Beef Stroganoff  - what is better in the fall than beef stroganoff on a wet day? I add 4 ounces of cream cheese and a few shakes of Worcestershire sauce to make it extra special.

Thursday: Crockpot Chicken Taco Chili - I love this recipe because I usually have everything on hand so it's an easy in-case-of-emergency meal. Plus anything with this many possible toppings to add in is always a winner in my book. [recipe card below]

Friday: HAPPY HALLOWEEN - we will be having the traditional Fe Family Dinner: Mummies (pigs in a blanket), witches toes (baked beans) and Jell-O with eyeballs (Jell-O made with a can of fruit cocktail).
