[monday meals mashup] week 12



...and posted on a Tuesday.

Yikes. I don't think I need to explain that things are a little rough right now and the blog is a little, well, waaa waaa. I'm going to do my best this week (which isn't saying much) and really try. Like give it the old college try.... I've never much understood that saying. "College try". When I was in college, the most try I had was to pace myself on the box of Cheez-its during the Friends DVD marathon. So, maybe more than the college try is what I should aim for this week?

I do have so much to share. I mean, Sam is officially 13 months old so he's gotten a job at Taco Bell, he's saving for a car, and looking into colleges. Psych. That kid is dead weight. Walking dead weight, but still dead weight. I'll aim for a Sam update this week.

Ok this is good, I feel like we are blog topic brainstorming. Anyone have anything else they are curious about? Blog topics, let's hear em. C'mon people, this blog is going to be a team effort this week. I thought we were in this together.

It is shocking with how things are going around here that yes, I am still cooking dinner. I don't know how this is happening. Ok, if I can be honest, mostly I'm making main dishes and Chuck can suck it on side dishes. It is what it is right now. Sides are the first thing to go.

Monday Meals Mashup (on a Tuesday)

Monday: Black Bean Enchiladas - this meal served a lot of purposes. We needed dinner, Chuck needed lunch today, and we needed a few emergency lunches in the freezer. That's where this dinner comes in. We've talked about this recipe before: I make a full batch (with a rotisserie chicken), but only make 8 enchiladas for us. The rest of the "innerds" get split into Tupperware bowls for the freezer. Then, in case of no-leftovers emergency,  Chuck has a frozen lunch option.

Tuesday: Pesto Pasta with Sundried Tomatoes and Aspargus - I've had this recipe on my pinterest board for about a month and it's time.  The final version of this calls for a fried egg on top. This part doesn't appeal to me but it might to you. It might to Chuck. I don't know. We haven't had that important "egg on pasta" discussion in our 13 year relationship.

Wednesday: Bowling night for Chuck's work. My plan is to roll Sam down the lane and see what happens.

Thursday: Chicken Quinoa Chili - easy, easy, easy. It's a crockpot dinner and there is usually enough leftover for Chuck to have lunch and another emergency freezer bowl to be made.

Friday: Broccoli Supreme - A classic Fe meal. It's nothing fancy just mish mashy goodness. Comfort food to the enth degree. [recipe card below]

I'm calling it at that. The weekend looks busy so I'm refusing to plan for it.
