[monday meals mashup] week three
(And praying this nap lasts five years while catching up on Teen Mom 2 day, meal planning and blogging about said meal planning. I may or may not watch Teen Mom to feel just a smidgen better about my parenting. That show is like a feel good comedy for the stay at home mom or new mom or any mom. I am not a bad person. I am not a completely bad person.)
Nothing special meal week at our house and keeping it with the "normal" dinners for another week (normal as in standard rotation, nothing special, things we've eaten since 2005). After being burned on the coconut chicken curry two weeks ago, I'll wait another week before trusting my Pinterest board again. Pinterest trust has to be earned. It betrayed that trust with the awful dinner.
Let's get to it.
Monday: Chicken Parmesan was our carry over from last week. Should've had this yesterday but after digging 75 feet of trenches in the backyard for the new lawn/sprinkler system (Chuck dug; I did the Lord's work and watched the child), Chuck wanted Little Caesars for dinner at 4 pm. Fine fine. He asks for so little.
Tuesday: Beef Tortas - I don't know why we call them tortas. They're pulled meat sandwiches. It's BOGO chuck roasts at the store this week so the roast cost will be about $6. Perfect. I'll cook it for 8-10 hours in Guiness beer - just Guiness. Trust me on this one. I'll toast some hoagie rolls and we will top the pulled meat with mayo, sour cream, avocado, lettuce, peppers, and onion. It's bomb.com.
Wednesday: Charlotte's Mexican-style Chicken. This is an easy recipe that my friend came up with years ago - dumping the contents of her pantry over chicken boobies. The recipe is below.
Thursday: Baked ziti. Chuck's favorite. He asks for it every week so once a month I cave. This is that week.
Friday: Chicken legs with chili-butter sauce. I got this recipe from Bestie Libby a few years ago. It calls for wings, but we like legs. It's easy, fast, and could feed an army. A good recipe if you had a full house.
Not sure what the weekend holds for us so I'm calling it at Friday this week. I'd rather run out Saturday morning and buy for those two dinners then have food go to waste. That's my plan and I'm sticking to it.
