Comfort food. Sigh. Is there anything better? Filet Mignon is great, and I love a good Thai infused, roast duck, mango salsa, whatever, but not everyday. And not on a lazy day. And not today. Some days, you need what Momma made you.

And today, I needed what Momma made me and I needed her to make it. Ugh. Casualty of marriage -- loss of Mom. Yuck, who would come to my rescue? Who would make me dinner for a change?

That Winner I married, that's who. I know I give him a hard time for his antics, but he did it. He made dinner. He made The Ultimate Comfort Food sans supervision. No help. No watchful eyes. I didn't even ask. He just did.

MMMmmm. Tuna Casserole.

6 oz. medium egg noodles, cooked
1 can albacore tuna, drained
1/4 cup mayo (NOT MIRACLE WHIP, blah, what kind of person are you?)
1/4 cup peas and carrots, frozen
1/4 cup minced onion
2 stalks of celery, sliced up real nice
1 can Cream of Mushroom
5 oz cheddar cheese, cubed or shredded to melt bettah
3/4 cup milk

Mix the noodles, tuna, mayo, veggies, and salt/pepper in a bowl.
In a small saucepan, heat milk, soup, and cheese over medium heat to melt the goodness, I mean cheese.
Grease a baking dish -- I like the standard round Corningware white casserole dish. But you choose your favorite. My feelings won't be hurt.
Pour in noodle mixture. Cover with cheddar sauce.
Bake at 425 for 25 minutes.
And enjoy the goodness. Sorry you don't have a Chuck to make it for you.
